Tarragon is one of the four fine herbs of French cooking, and is a great complement to chicken, fish, and egg dishes. Tarragon is the main flavouring component of a Béarnaise sauce. Fresh, lightly bruised sprigs of Tarragon are used when making a traditional Béarnaise sauce or steep them in vinegar to produce a savoury Tarragon vinegar.

  • Fresh, quality herbs, will appear as though they have just been picked with plump looking leaves. Look for produce that has healthy stems with no signs of yellowing or wilting.

  • Herbs should be kept covered in a cool area away from refrigeration fans.
