1/4 cup water
1 ripe melon, peeled, seeded, and cut into small pieces (4 cups)
2/3 cup fresh lime juice
1 tablespoon honey or Agave syrup
Blend water, half of melon, half of lime juice in a blender until smooth.
Add honey (or Agave syrup), remaining melon and lime juice. Continue to purée until smooth.
Pour into Popsicle mounds (or an ice cube tray). Add popsicle sticks and freeze until solid.
