GRILLED LAMB CHOPS WITH POMEGRANATE GLAZE

INGREDIENTS

  • 12 x 85g lamb chops

  • Salt

  • Pepper

  • Chopped fresh mint leaves

  • Pomegranate seeds

  • Pomegranate Glaze:

  • Olive oil

  • Pomegranate juice

  • Dark brown sugar

  • Garlic

  • Dijon mustard

METHOD

  1. In a small saucepan over low heat whisk together the olive oil, pomegranate juice and dark brown sugar. Whisk until ingredients are dissolved and well blended.

  2. Add in garlic and Dijon mustard, whisk to thoroughly blend all ingredients.

  3. Season lamb chops with salt and pepper.

  4. Lavishly brush both sides of the lamb chops with glaze. Retain extra glaze to use while grilling chops.
