Curry leaves are used predominantly in Indian and Sri Lankan cooking with the freshest leaves particularly aromatic and having a strong, pungent flavour. Fresh curry leaves can be fried in oil to add great depth of flavour at the start of cooking, or shredded and added to dishes in the last few minutes, whereby the heat will lightly soften the leaves and release a more delicate flavour. Curry leaves are great with lentils, vegies, fish, coconut, turmeric and mustard seeds in slow-cooked curries, spice mixes and chutney
