  • 200g fresh rocket, locally grown

  • 2 crisp pears, thinly sliced. Try Buerre Bosc, Packham Pear, Nashi Pear or even a Red D’Anjou or 2 Pink Lady Apples, thinly sliced

  • 2 Tbs Balsamic Vinegar

  • 3 Tbs Cold Pressed Olive Oil. The better the oil, the better the end product.

  • 1/3 cup walnuts

  • Parmesan (optional)

  • Pepper to taste


  1. Add fresh rocket and sliced pears/ or apples to your salad bowl.

  2. In a seperate small jug combine the Balsamic Vinegar and Olive Oil. Lightly stir and pour over the salad. Use your fingers to gently and evenly coat fresh ingredients.

  3. Sprinkle over the top of the salad the walnuts – crush these slightly as you sprinkle them.

  4. If desired, just before serving drizzle with balsamic and grate fresh shavings of parmesan across the top of the salad.
